Lemonhead Cookies

1/2 cup butter 1/2 cup sugar 1/4 cup brown sugar 1 tsp. lemon zest Juice from 1 lemon 1 egg 1 tsp. vanilla extract 1/8 tsp. salt 1/2 tsp. baking soda 1 1/2 cups flour 4 oz. Lemonhead candies [YIELD: ABOUT 2 DOZEN] Preheat oven to 350 and grease baking sheets. Prep your Lemonhead candies by chopping coarsely in a food processor. In a large bowl, cream together butter and sugars. Add lemon zest, lemon juice, egg and vanilla extract. Mix well. In a separate bowl, combine salt, baking soda and flour. Slowly add dry ingredients to wet mixture. Mix until fully combined. Drop by tablespoonfuls on baking sheets and bake for 10-12 minutes or until just becoming golden brown.
