From the kitchen of Jane Reiter. Ingredients ½ c. Butter 2 eggs ½ c. orange juice 2 T. grated orange rind (2-3 oranges) 1 c. sugar 2 ½ c. flour ½ t. baking powder ½ t. salt ½ t. baking soda in the orange juice Directions Blend butter, sugar, salt, eggs, rind and juice. Stir in dry ingredients and mix well. Drop from teaspoon onto a greased baking sheet. Bake at 375°F 15-20 minutes or until delicately brown. Cover with orange icing while still warm. Orange Icing 1 T. orange juice 1/2 t. grated orange rind ¼ t. salt 1 T. butter 1 c. powdered sugar Blend juice and rind with butter. Stir in sugar and salt—beat until smooth.
