Recipe of the Month: Early Bird Coffee Cake

From the kitchen of Dan Ruffing, East Lansing. Ingredients
  • 2 ½ cups flour
  • ½ teaspoon salt
  • 2 Tablespoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 2 cups brown sugar
  • 2/3 cup shortening
  • 1 cup buttermilk
  • 2 eggs
Directions Preheat oven to 350 degrees. Combine first six ingredients in bowl. Add shortening and brown sugar and mix again. Reserve 1 cup of mixture for topping. Stir in milk and egg until flour mixture is moist. Pour into 13×9 baking dish and sprinkle reserved flour mixture on top. Bake in 350 oven for 40 minutes.
