Spicy Tortilla Chip Chicken Tenders

with Honey Mustard Dipping Sauce

Prep and cook time: 35 min.


1 lb. chicken breast tenders
1 tsp. salt
½ tsp. pepper
1 tsp. ground cumin
1 ½ tsp. crushed red pepper flakes
2 large eggs
1 tsp. hot sauce
cooking spray
3 cups crushed tortilla chips


Preheat oven to 425˚
Stir together 1 teaspoon of salt and next 3 ingredients with the crushed tortilla chips.
Whisk eggs just until foamy, and stir in hot sauce.
Place aluminum foil sprayed with cooking spray on a cookie sheet.
Dredge chicken tenders in egg mixture and let sit for 5 minutes, and then dredge in crushed tortilla chip mixture.  Place chicken on the foil about
½ inch apart.
Bake at 425° for 18 to 20 minutes or until golden brown and done, turning once after 12 minutes. Then allow chicken to broil for about 5 minutes or till it’s the crispiness you desire.

Honey Mustard dipping sauce:
½ cup of honey
3 tbsp. of Dijon Mustard
1 tsp. paprika
1 tsp. mustard seed
2 tbsp. of red wine

Mix all ingredients together, stir and serve.
